Banh Xeo is a delicious Vietnamese dish that consists of crispy pancakes filled with various ingredients. Here's a general recipe to guide you on how to cook Banh Xeo:
Ingredients:
For the Pancake Batter:
1 cup rice flour
1 cup coconut milk
1 cup water
1/2 teaspoon turmeric powder
1/2 teaspoon salt
For the Filling:
1/2 pound pork belly, thinly sliced
1/2 pound shrimp, peeled and deveined
1 small onion, thinly sliced
Bean sprouts
Fresh herbs (such as mint, cilantro, and Thai basil)
Lettuce leaves
Vegetable oil for frying
For the Dipping Sauce:
3 tablespoons fish sauce
2 tablespoons lime juice
2 tablespoons water
1 tablespoon sugar
1 clove garlic, minced
1 small chili, thinly sliced (optional)
Instructions:
1. In a large bowl, whisk together the rice flour, coconut milk, water, turmeric powder, and salt until you have a smooth batter. Let the batter rest for about 30 minutes.
2. Heat a non-stick skillet or crepe pan over medium heat and add a tablespoon of oil to the pan. Spread the oil evenly to coat the surface.
3. Add a few slices of pork belly to the pan and cook until they start to brown. Then add some shrimp and onion slices, distributing them evenly in the pan.
4. Give the pancake batter a quick stir and ladle a scoop of batter into the hot pan. Tilt the pan to spread the batter thinly and evenly, covering the filling ingredients.
5. Let the pancake cook for a few minutes until the edges turn crispy and golden. Sprinkle a handful of bean sprouts over one half of the pancake.
6. Fold the pancake in half, covering the bean sprouts, and press it gently with a spatula to seal the edges. Cook for another minute or until the pancake is crispy.
7. Transfer the cooked Banh Xeo to a serving plate and repeat the process to make more pancakes, adding oil as needed.
8. Serve the Banh Xeo while they're still warm. To enjoy, take a piece of lettuce leaf and place a portion of Banh Xeo on it. Add some fresh herbs and roll it up. Dip the roll into the prepared dipping sauce.
9. For the dipping sauce, mix fish sauce, lime juice, water, sugar, minced garlic, and sliced chili (if desired) in a small bowl until the sugar dissolves.
Banh Xeo is best enjoyed immediately while the pancakes are still crispy. You can customize the fillings to your liking, adding ingredients like mung bean sprouts, mushrooms, or sliced bell peppers. Feel free to experiment and adjust the recipe according to your preferences. Enjoy your homemade Banh Xeo!
