Ingredients:
2 boneless, skinless chicken breasts
Salt and pepper to taste
1/2 cup all-purpose flour
2 large eggs, beaten
1 cup breadcrumbs (plain or seasoned)
1/2 cup grated Parmesan cheese
1/4 cup vegetable oil or olive oil
1 cup marinara sauce
1 cup shredded Perfect Italiano Grated Mozzarella Cheese
Fresh basil or parsley for garnish (optional)
Instructions:
1. Preheat your oven to 400°F (200°C).
2. Prepare the chicken breasts by slicing them horizontally to create two thinner cutlets. This will help them cook more evenly and quickly. Alternatively, you can use pre-cut chicken cutlets.
3. Season the chicken cutlets with salt and pepper on both sides.
4. Set up three shallow bowls or plates. In the first bowl, place the flour. In the second bowl, beat the eggs. In the third bowl, mix the breadcrumbs and grated Parmesan cheese.
5. Dip each chicken cutlet into the flour, shaking off any excess. Then dip it into the beaten eggs, allowing any excess to drip off. Finally, coat the cutlet with the breadcrumb and Parmesan mixture, pressing lightly to adhere the breadcrumbs.
6. Heat the oil in a large skillet over medium heat. Once the oil is hot, add the breaded chicken cutlets and cook until golden brown and crispy on both sides, about 3-4 minutes per side. You may need to do this in batches depending on the size of your skillet.
