How to cook Vietnamese pho


Pho is a popular Vietnamese soup known for its flavorful broth, rice noodles, and various toppings. While the traditional process of making pho can be time-consuming, here's a simplified recipe for homemade pho:



Ingredients for the broth:

2 onions, halved

4-inch piece of ginger, sliced

4-5 pounds beef bones (such as oxtail, marrow bones, or beef knuckles)

1 cinnamon stick

4 star anise

4 cloves

1 tablespoon coriander seeds

6 cups beef broth

6 cups water

2-3 tablespoons fish sauce

1-2 tablespoons sugar

Salt, to taste

Ingredients for the bowl:

8 ounces rice noodles



1 pound beef (such as thinly sliced sirloin, brisket, or flank steak)

Bean sprouts

Fresh herbs (such as Thai basil, cilantro, and mint)

Lime wedges

Thinly sliced chili peppers (optional)

Hoisin sauce and sriracha sauce (optional)

Instructions:

Char the onions and ginger: Place the halved onions and sliced ginger on a baking sheet and broil in the oven until they become charred and fragrant. This step helps enhance the flavors of the broth.

Prepare the spice bundle: In a dry skillet, lightly toast the cinnamon stick, star anise, cloves, and coriander seeds until fragrant. Bundle the spices in a cheesecloth or spice bag.

Make the broth: In a large pot, add the beef bones, charred onions, ginger, spice bundle, beef broth, and water. Bring to a boil, then reduce the heat to low and let it simmer for at least 3-4 hours (the longer, the better) to develop a rich and flavorful broth. Skim off any impurities that rise to the surface.

Season the broth: Remove the spice bundle, onions, and ginger from the pot. Season the broth with fish sauce, sugar, and salt to taste. Adjust the flavors according to your preference.

Prepare the toppings: While the broth is simmering, cook the rice noodles according to the package instructions. Thinly slice the beef and prepare the bean sprouts, fresh herbs, lime wedges, and sliced chili peppers. Arrange the toppings on a plate.

Assemble the pho bowl: Place a portion of cooked rice noodles in each serving bowl. Top with sliced beef. Ladle the hot broth over the noodles and beef, ensuring they are fully submerged in the broth. The hot broth will partially cook the beef.

Serve: Allow diners to customize their bowls by adding bean sprouts, fresh herbs, lime juice, chili peppers, and sauces like hoisin and sriracha according to their taste.

Pho is often served with additional condiments and side dishes, such as crispy bean sprouts, sliced onions, or chili paste. Feel free to experiment and adjust the recipe based on your preferences. Enjoy your homemade pho!
