How to make Italian Biscotti

 Biscotti is a type of Italian cookie that is twice-baked, resulting in a crispy and crunchy texture. Here's a basic recipe for making biscotti:


Ingredients:

2 cups all-purpose flour

1 1/2 teaspoons baking powder

1/4 teaspoon salt

3/4 cup granulated sugar

1/2 cup unsalted butter, softened

2 large eggs

1 teaspoon vanilla extract

1/2 cup chopped nuts or dried fruits (optional)

Additional granulated sugar for sprinkling (optional)

Instructions:

1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

2. In a bowl, whisk together the flour, baking powder, and salt. Set aside.

3. In a separate bowl, cream together the softened butter and granulated sugar until light and fluffy. You can use an electric mixer or mix by hand.

4. Beat in the eggs one at a time, ensuring each egg is fully incorporated before adding the next. Then mix in the vanilla extract.

5. Gradually add the dry ingredients to the wet ingredients and mix until a dough forms. If desired, stir in chopped nuts or dried fruits.

6. Divide the dough in half. On the prepared baking sheet, shape each portion of dough into a log about 12 inches long and 3 inches wide, spacing them a few inches apart. Wetting your hands can help prevent sticking.

7. Bake the logs in the preheated oven for about 25-30 minutes, or until they are lightly golden brown and firm to the touch.

8. Remove the logs from the oven and let them cool on the baking sheet for about 10-15 minutes.

9. Reduce the oven temperature to 325°F (165°C).

10. Transfer the slightly cooled logs to a cutting board. Using a sharp knife, slice the logs diagonally into about 1/2-inch thick slices. You can slice them straight across for more uniform biscotti or at an angle for longer and more traditional-shaped biscotti.

11. Place the sliced biscotti back on the baking sheet, cut side down, and return them to the oven.

12. Bake for an additional 10-15 minutes, or until the biscotti are dry and lightly toasted. If you prefer them crispier, you can bake them a bit longer.

Once done, remove the biscotti from the oven and let them cool completely on a wire rack.

Optional: If desired, sprinkle the cooled biscotti with granulated sugar for extra sweetness.

Once fully cooled, your biscotti is ready to be enjoyed! Serve them with your favorite hot beverage, such as coffee or tea.

Biscotti can be stored in an airtight container for several weeks, making them a great treat to enjoy over time or to give as gifts. Feel free to customize the flavors by adding ingredients like chocolate chips, citrus zest, or different spices. Enjoy!
